Creamy Bacon & Broccoli Stuffed Chicken with Rice
Serves: 4 People (Cut in amounts in half for dinner for two)
Total Time: 40–45 minutes
Ingredients:
- 4 chicken breasts
- 6 slices bacon
- 1 cup broccoli, finely chopped
- ½ cup cream cheese, softened
- 1 cup shredded cheese (cheddar or mozzarella)
- ½ tsp garlic powder
- Salt & pepper
- 1 tbsp olive oil
- 4 cups rice
Instructions:
1. Prepare the Filling
— Mix cream cheese, shredded cheese, chopped broccoli, garlic powder, salt, and pepper.
2. Stuff the Chicken
— Slice a pocket into each chicken breast
— Stuff with the broccoli-cheese mixture
— Wrap each breast with 1–2 slices of bacon
— Secure with toothpicks if needed.
3. Bake
— Preheat oven to 375°F (190°C)
— Heat olive oil in a skillet and sear chicken 2–3 minutes per side
— Transfer to oven and bake 20–25 minutes until cooked through (165°F internal temp)
4. Cook rice as per package instructions
5. Serve stuffed chicken over rice

Hearty Beef & Veggie Pasta Skillet
Serves: 4 People (Cut in amounts in half for dinner for two)
Total Time: 40 Minutes
Ingredients:
- 1 lb ground beef
- 1 jar Classico pasta sauce
- 3 cups cooked pasta (or serve over rice if preferred)
- 1 cup broccoli florets
- 1 cup snap peas
- 1 bell pepper, sliced
- ½ onion (optional)
- 1 cup shredded cheese
- 1 tbsp olive oil
- Salt, pepper, Italian seasoning
Instructions:
Cook the beef
— Heat olive oil in large skillet
— Add ground beef and onion, cook until browned
— Drain excess grease
Add Veggies
— Stir in broccoli, snap peas, and peppers
— Cook 304 minutes until slightly tender
Add Sauce
— Pour in Classico sauce
— Simmer 5-10 minutes
— Sitr in cooked pasta (or spoon over rice)
— Top with shredded cheese and let melt
